Australian Christmas: the intermingled smell of sunscreen and pork crackling.
This month we wanted to share the struggles of a nation obsessed with cooking a traditional roast dinner in the middle of summer. We did this not-so-sympathetically by brewing a rather traditional Christmas Ale - guaranteed to pair perfectly with your completely weather-inappropriate feasting.
Papá Noel is an English Strong Ale, brewed with local barley malt, plus a few imported specialty malts, to create a rather hefty, rather red and rather malty beer.
Expect rich malt sweetness, hinting at toffee and dried fruits. This is balanced in the finish by a dry, nutty character that will have you looking for another sip. Definitely big enough to match the richest of festive foods.
Papá Noel will also cellar very well - we'd expect it to be drinking well in 5+ years (if cellared carefully), gaining in complexity and mellowing out as it does so.
